Cherleen’s Shrimp Mousse
1 1/2 to 2 cups shrimp, cooked
1 cup finely chopped celery
3 stalks green onion, chopped
1 cup mayonnaise
1 can cream of mushroom soup
1 package unflavored gelatin
Dash lemon juice
1 ( 8 ounce ) package cream cheese
Chop shrimp, celery and onion very fine: add to mayonnaise. Slowly melt cream cheese over low heat. When melted, add soup and bring to a boil over low heat. Mix gelatin with 1 tablespoon water. Blend soup mixture into gelatin and remove from heat. Combine remaining ingredients. Pour into mold and chill at least four hours.
