Sandra’s Apple and Cinnamon Bake
2 pounds cooking apples, peeled, cored, and sliced
Ground cinnamon
Granulated sugar
1 cup raisins
8 ounces flour
8 ounces powdered sugar
8 ounces butter
4 ounces ground almonds
4 eggs, beaten
½ teaspoon, vanilla
2 lemons
Peel, core, and slice the apples. Sprinkle with lemon until ready to cook to keep from discoloring. In a large pan, spread the apple and toss generously with sugar and cinnamon. Cook in a 350
° oven for about 30 to 35 minutes or until soft. In a mixing bowl, cream the butter and mix in the eggs. Sift the flour and powdered sugar into the mixing bowl. Add ½ teaspoon of vanilla extract, and the ground almonds. Mix well. Pour over apples and cook at 350° until cake is golden brown, about another 25 minutes. Serve with whipped cream, or custard.
