Isabelle's Carimanola's

3 pounds of Yuca

1 pound ground beef or pork

small amount of salt diluted in a small amount of water

1/2 Onion, chopped

1 clove garlic, chopped

1 & 1/2 TBS chopped parsley

2 tsp tomato paste

3 tsp lard

1/8 teaspoon sugar

Sifted flour, if the dough is sticky

First you boil the Yuca with salt, don't let it get too soft. Grind it while it is still warm and knead it with the salt and the lard. Add some flour if you think the dough is too sticky. To form the carimanolas, first form balls, then flatten and fill each with the meat stuffing, shaping into ovals, and seal well. It should be about the size and shape of a Twinkie. Fry in very hot oil until golden brown.

THE FILLING: Season ground meat with salt, onion, garlic, sugar, and parsley. Brown well in a little hot oil, and stir in the tomato paste. Simmer gently for 15 minute, the allow to cool slightly.
