3 cans sweetened condensed milk (preferably Eagle brand)
8 egg yolks (save whites for merengue)
1/2 cup key lime juice
2 tsp vanilla
6 tsp sugar
2 deep dish pie shells
Pour condensed milk into a bowl and
stir in beaten egg yolks.
Slowly add key lime juice until desired tartness.
Bake pie shell in 350 degree oven for 10 min until golden brown (make sure
you pierce with a fork first).
Pour condensed milk ,egg ,and lime mixture into pie shell.
Beat room temperature egg whites till fluffy,,, slowly adding a tsp of
vanilla and 3 tsp of sugar.
Spread merengue (fluffy egg whites) on top of filled pie crust.
Bake in 350 degree ovem until merengue is golden brown.
There's no need to cook the filling because the Lime juice has
cooked the yolks already...
Refrigerate for at least an hour so it will set.. dont try to
eat it warm or it will be runny... If you need more lime juice you can add
it to taste..
