Champagne
Cocktail Recipes
Some prefer Champagne at breakfast time, in or out of
cocktails; the classic Champagne cocktail - Buck's Fizz (see Fizzes &
Slings page) is traditionally enjoyed at this hour. Others feel that the
effervescence of this wine, which epitomizes the lively spirit of the 1920's,
is more suitable at night. The important thing to remember is that it is not
necessary to spend a lot of money on Champagne for cocktails - inexpensive
Champagne, or even sparkling white wine, is very good.
Never
put Champagne in an electric blender or food processor - you may end up with
your cocktail on the walls!

BASIC CHAMPAGNE COCKTAIL
1 sugar lump
few dashes of Angostura Bitters
Champagne to top up
Place a lump of sugar in a wine glass and saturate
it with Angostura bitters. Add a lump of ice and top up with Champagne. Add a
twist of lemon peel and decorate with an orange slice.

PADDY'S NIGHT
1 measure Green Creme de menthe
1 measure Irish Whiskey
Champagne to top up
Shake the ingredients well with ice and strain into a large wine glass. Top
up with Champagne to serve.

CALIFORNIA DREAMING
2 dashes of Kirsch
3 measures of Pineapple juice
1 dash of lemon juice
Champagne to top up
Put the ingredients in an electric blender with a few ice cubes and blend for
30 seconds. Pour into a wine glass and top up with Champagne. Decorate with
pineapple.

AMERICANA
1 measure Bourbon whiskey
1/2 teaspoon caster sugar
1 dash of Angostura bitters
Champagne to top up
Stir the ingredients in a wide Champagne glass until the sugar has dissolved.
Top up with Champagne and decorate with a peach slice on a cocktail stick.

BLACK TIE
30 ml Creme de cacao
Champagne
slice of kiwi fruit
Pour creme de cacao into a tall glass and top up with champagne. Decorate
with a slice of kiwi fruit.

CARIBBEAN
15 ml Orange curacao
Champagne
slice of orange and a cherry
Pour curacao into an old style champagne glass. Top up with champagne and
decorate with orange slice and a cherry.

CHAMPAGNE BUCK
50 ml Champagne
30 ml Gin
2 dashes of Cherry Brandy
5 ml Orange Juice
Give ingredients a hefty shake with ice then strain the effervescent mixture
into a cocktail glass.

KIR ROYALE
Maraschino Cherry
30 ml Creme de cassis
Top up with chilled Champagne
Strawberry
Drop the cherry into the bottom of a Champagne flute and pour the creme de
cassis over. Top up with Champagne. Garnish your blackcurrant flavoured fizz
with a sliced strawberry pushed over the rim of the glass.

NEW ORLEANS DANDY
1 measure Light Rum
½ measure Peach
Brandy
1 dash of Orange
juice
1 dash of Lime
juice
Champagne to top
up
Shake the
ingredients well with ice and strain into a large wine glass. Top up with Champagne and decorate with an
orange slice and a cocktail cherry.

HONEYDEW
1 measure Gin
½ measure Lemon
juice
1 dash of Pernod
60g (2 oz)
Honeydew Melon, diced
Champagne to top
up
Place the
ingredients, with some ice cubes, in an electric blender. Blend for 30 seconds, then pour into a
large wine glass. Top up with
Champagne and decorate with small pieces of melon.
