Rum Recipes
Rum will be forever associated with the West Indies,
its true home, and the Royal Navy, its second home. Rum comes in various clours
and strengths - and the strong versions are pretty powerful. White rum, which
is colourless, was originally known as Cuban rum.
Locally made rum is an excellent base for cocktails because its flavour blends particularly well with fruit juices and other spirits. It is the base for one of the great cocktails, the Daiquiri.

BRASS MONKEY Ice Cubes One Part light rum One part Vodka Four parts Orange
juice A slice of orange Fill a highball
glass with ice cubes and pour the rum, vodka and orange juice over them. Stir carefully and serve decorated with
the slice of orange and a pretty straw. |
THE BEE’S KISS Crushed Ice Two parts Light
Rum One part Clear
Honey One part thick
cream Place about a cup
of crushed ice into a cocktail shaker and pour the rum, honey and cream over
it. Shake vigorously until
blended. Strain into a chilled
cocktail glass and serve ungarnished. |
BETWEEN THE SHEETS
Ice Cubes One part Light Rum One part Brandy One part Cointreau A teaspoon of
lemon juice A twist of lemon
rind Place five or six
ice cubes in a cocktail shaker. Add
the rum, brandy, Cointreau and the teaspoon of lemon juice. Shake well and strain into a cocktail
glass. Serve garnished with a twist
of lemon rind. |
TOM AND JERRY One egg Half a part sugar
syrup (or less to taste) One part Dark
Jamaican Rum One part Cognac Boiling Water Grated Nutmeg Separate the yolk
of the egg from the white and beat each separately. Fold them together and add the sugar syrup. Place this mixture in a warmed coffee mug,
add the rum and cognac and top up with boiling water. Sprinkle grated nutmeg on top and serve
piping hot. |
