Applesauce Cake
Preheat oven to 350 degrees, grease two 9 inch round cake pans.
Cream butter then add the sugar, beating until well blended. Add beaten egg yolks and applesauce and beat until mixture is smooth. Set aside.
Combine flour and other dry ingredients and sift five times. Add alternately the dry mixture, the butter and milk. When blended, add the vanilla, nuts and raisins.
Now fold in stiffly beaten egg whites. Pour into pans and cook for about 40 minutes, or until it tests done.
I do recommend a nice caramel frosting, which is included in "The Baking Bear"
