Pineapple Walnut Carrot Cookies
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup quick oats
3/4 cup brown sugar(packed)
3/4 cup granulated sugar
1 cup real butter(softened)
2 eggs
2 teaspoons pure vanilla extract
2 cups grated carrots
1/2 cup crushed pineapple(drained)
1 cup chopped walnuts
Preheat oven to 350 degrees.
Sift flour, baking powder, baking soda, cloves, cinnamon and salt together then add oats, mix and set aside.
In another bowl combine sugars, butter, eggs and vanilla. Mix well, then stir in carrots, pineapple and nuts.
Add the flour and oats mixture, mixing just until blended. Drop with a tablespoon onto an ungreased cookie sheet, about 1 1/2 inches apart. Bake for 10 to 15 minutes.
