ANGEL HAIR PASTA with PLUM TOMATOES and FRESH BASIL
From Weight Watchers Cook Book
- 6 ounces angel hair pasta
- 1 tablespoon extra virgin olive oil
- 1 garlic clove, crushed
- 6 plum tomatoes, peeled, seeded and chopped
- 1/2 cup minced fresh basil
- 1/2 teaspoon salt
- Freshly ground pepper, to taste
- 2 teaspoons balsamic vinegar
- 1 1/2 ounces Parmesan cheese, shaved
Cook the pasta according to package directions. Drain: set aside and keep warm.
In a large nonstick skillet, heat the oil. Add the garlic and sauté until fragrant, about 30 seconds. Add the tomatoes and cook, stirring as needed, until softened, about 5 minutes. Stir in the basil, salt, and pepper; cook until the tomatoes are very soft, about 5 minutes. Pour over the pasta; toss with the vinegar. Serve, topped with the Parmesan.

BASIC QUICKIE PASTA

- 10 oz. Low Fat Frozen Broccoli w/Cheese Sauce (Green Giant)
- 1 clove Garlic, crushed or minced
- 2 Tbs. Olive Oil
- 1/2 cup Fresh tomatoes, chopped
- 1/4 cup Dry white wine or chicken broth
- 6 oz. Prawns or large shrimp, peeled and fully cooked
- Pasta preferred --Angel Hair or Linguine
Cook desired amount of pasta for 4 people. (Usually sm. pkg.) Drain well. While pasta is cooking prepare sauce, heat broccoli as per package directions. While cooking, sauté garlic in oil (to really cut fat, I use non-stick skillet, olive oil pam, and 1
tbs. of chicken broth) until tender and golden. Stir in wine or broth then heat to a boil for a few minutes until sauce reduces slightly. Add vegie/cheese mixture to skillet and stir to mix. Gently stir in tomatoes. Pour over cooked pasta and toss to coat. Finish with salt and cracked pepper to taste. Garnish with fresh chopped basil and parmesan cheese. Serves 4. Enjoy.
