CHICKEN AND RICE CASSEROLE

- 2 boneless chicken breasts, cut into bite size pieces (uncooked)
- 10 3/4 oz can of cheddar condensed cheese soup
- 2 cups brown rice (uncooked)
- salt and pepper to taste
- 1/2 cup bread crumbs
- 1 cup shredded cheddar cheese
- broccoli
Spray 9x13 inch casserole dish with cooking spray, add broccoli, chicken and rice. Sprinkle with salt and pepper. Mix soup and water and pour into casserole, mix all ingredients. Sprinkle with bread crumbs. Bake uncovered at 350 degrees for about 45 min.. Remove cover and stir again. Top with cheese and a few more bread crumbs. Bake another 10-15 min. or until thick and bubbly.
*Note from Donna You will need to add water. Probably 21/2 to 3 cups.
