Oatmeal Cookies

Heat oven to 375*. Beat together butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, soda and salt, add to butter mixture, mix well. Stir in oats. Drop by rounded teaspoons onto UNGREASED cookie sheet. Bake 8-9 minutes. You may add 1 cup of raisins if desired.
Makes 4-1/2 dozens

Rasberry Almond Shortbread Thumbprint Cookies

Glaze:
Heat oven to 350 degrees. In large mixer bowl combine sugar, butter and almond extract. Beat at medium speed until creamy ( 2 to 3 minutes). Reduce speed to low; add flour. Beat until well mixed (2 to 3 minutes). Cover and chill dough at least one hour.
Shape dough into 1 inch balls. Place 2 inches apart on cookie sheets. With thumb, make indentation in center of each cookie (edges may crack slightly). Fill each indentation with 1/4 tsp. jam.
Bake for 14-18 minutes or until edges are lightly browned. Let stand 1 minute; remove from cookie sheet. Cool completely.
* Meanwhile, in small bowl with wire whisk, stir together all glaze ingredients until smooth. Drizzle over cookies. Makes 3 1/2 dozen.

BUTTER COOKIES

Here's my recipe for butter cookies. They are wonderful. Recipe given to me by my MIL 28 years ago, when hubby and I were married.

Cream butter, sugar, egg yolks and vanilla. Slowly (emphasis on slowly, this recipe is tough on my KitchenAid mixer) add flour. Dough will be a little sticky. Put dough in a cookie press or cookie gun with desired shape and press onto ungreased cookie sheets. Decorate with sprinkles, etc. Bake at 350*F for 12 to 15 minutes. Enjoy!!

GINGERSNAP COOKIES

A personal note about this recipe: It is my tradition to make these cookies on the first day that it snows, and STICKS. The ground must be white with snow before I can make them. I can't make them before this happens. All my friends and family know about this tradition of mine, and each year when it snows for the first time, everyone asks me, "Did you make gingersnaps?" LOL - it's just a little fun thing, and for me, the beginning of the holiday season.

Cream sugar and shortening. Add egg, molasses, and vanilla and beat well. Sift dry ingredients and add to creamed mixture. Make into small balls and roll in sugar. Bake at 350 degrees for about 15 minutes. They will crack open on top when done.

CHEWY COCONUT BARS

Preheat oven to 350* (convection oven=300*) Grease 9 x 12 baking pan. In large bowl, cream shortening, brown sugar, eggs and vanilla. Slowly blend in flour, baking powder and salt. Mix well until blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in greased pan. Bake for 20 - 25 minutes. Let cool before cutting into bars. Makes about 1 1/2 dozen.

CHERRY CHEESECAKE BARS

Combine the first 4 ingredients. Reserve 1 cup; press remaining in foil lined (or greased) 9 X 13" pan. Bake 15 minutes at 350. Beat cream cheese until fluffy, about 1 minute. Gradually add milk and extract, beating until smooth. Spread over crust, top with fruit filling. Sprinkle with reserved crumbs. Bake at 350 for 45-50 minutes. Cut into bars, chill.

PEANUT BUTTER COOKIES

(*Note.. No Flour) Mix together till thick. (Will leave sides of bowl) Roll into balls. Flatten with fork tines; bake 10 min. at 375. on ungreased pan. Yummy!

DONUT HOLES

I've always made them out of biscuits. You know, the kind in the refrigerated can? I cut the biscuit in four pieces, roll and deep fry. Then you can roll them in cinnamon and sugar, powdered sugar and a little water to make a glaze, to that you can add chocolate to make a chocolate glaze, etc...
