FEELIN' BLUE(BERRY)-YOGURT SHAKE

When I think of summer foods, blueberries are one of the first things that comes to mind. This Recipe of the Week is cool, creamy and refreshing. This beverage makes a wonderful substitution for breakfast, snack, or dessert and it's so tasty and simple to make, you'll be tempted to serve it, not just when you're feeling blue(berry), but ANYTIME!

You'll need:

  • 1 cup of fresh blueberries
  • 1 cup of plain yogurt
  • 1/2 cup of milk
  • ice cubes (about 3)
  • sugar to taste

Place all the ingredients in a blender and blend until all the ice is well chopped up. This recipe should make 2 nice size drinks.

*** You may use low or no fat yogurt and milk and a sugar substitute in an effort to cut calories and fat!

~* And now, in the true Patsy Cline Fan tradition of lovin' good tasting, fattening food, The Homesick Texan asked me if ice cream could be substituted for the yogurt. Although I haven't made it that way yet, I say it can be substituted, but I'd leave out the sugar and ice cubes.
