Recipe of Week ~ "Calling it Splits", Banana Split Cake

I once knew someone who threw themselves a "Divorce Party", and although that's not a very common thing to do, I think a " Banana Split Cake " would be an appropriate way of celebrating such an event. There are so many recipes for bananas out there and so I take this opportunity to direct you to Wayne Hilburn's 104 Uses for Bananas. This webpage contains anything you've ever wanted to know about bananas, plus lots of banana recipes. I have always gotten many compliments on the recipe below, and it's a cool cake to serve on a hot summer's day.

You'll Need:

• 2 cups graham cracker crumbs
• stick butter or margarine, melted
• 1/2 cup chopped pecans
• 2 (8 ounce) packages cream cheese
• 1 cup sugar
• 1 can pineapple , crushed and drained well
• 1 jar strawberry jam
• 4 or 5 , sliced
• 1 large container of Cool Whip
• Cherries to taste
• Chopped Pecans

Directions:

Combine crumbs, margarine and pecans. Press into a 9 x 13 inch pan. Chill for at least 1/2 hour. Cream the cheese and sugar. Spread over crust. Layer the pineapple, jam and bananas over cream cheese layer. Top with Cool Whip. Sprinkle cherries and chopped pecans on top. Refrigerate.
