I am trying my best to erase those blues after my beloved New York Mets were defeated in the 2000 World Series by the Yankees in five games. To help that process along I present you with a recipe
based on the lyrics of a Patsy song (listening to Patsy always erases the blues), and the colors of my favorite baseball team ~ blue and orange! And while I am on the subject of baseball, the World Series games should begin earlier. It's very difficult for those of us who are " startin' out early and comin' home late " to stay awake for the games!
Preheat oven to 350°F. Place snappers in a single layer in
a baking dish lightly sprayed with Pam . Sprinkle with salt and pepper. Combine the orange juice, the orange zest and the oil
and pour over fish. Sprinkle with all spice and bake for approximately 20 minutes or until fish flakes when tested.
* This recipe is a bit lighter in taste than my microwave version of Fish A la Orange.
Bluefish Snappers
1 1/2 lbs. fillet snappers
Salt & Pepper to taste
Dash of All Spice--for some piazza!...er, I mean pizzaz!
2 Tbsp. orange juice
1 tsp. grated orange zest
3 Tbsp. canola oil
