Homemade Butterscotch Pudding


Ah, Butterscotch, what a delightful flavor! I feel it is so reminiscent of the 50's. This creamy pudding is another sweet dream your family will enjoy.

  • You'll Need:
  • 2/3 cup of brown sugar ~ pack it in there
  • 1/8 tsp. salt
  • 2 egg yolks ~ slightly beaten
  • 2 cups of milk
  • 2 tbs. cornstarch
  • 2 tbs. butter ~ softened 1-1/4 tsp. vanilla

    Blend the sugar, cornstarch and salt in a pan ( about 2 qt. size).Combine the milk and egg yolks and then slowly stir them into the sugar mixture. Over medium heat, stir mixture continuously until mixture thickens and reaches a boil. Allow to boil for about 1 minute, stirring constantly. Remove from heat and add the butter and the vanilla. Stir well and then pour into desert dishes. Allow to cool a bit first, then refrigerate.
