This is a plain and simple Fettucine Alfredo, also commonly referred to as "heart attack on a plate". I know that Patsy Cline loved Italian food, particularly spaghetti, but, I have a feeling that she would have enjoyed this dish too!
1 pound of fresh or 8 oz. box of fettucine ( plain or spinach)
2 cloves of garlic - minced
1 cup of heavy cream
1/2 cup of Parmesan cheese - freshly grated ( or you may use a Parm-Romano mixture)
3 tbs. butter
Fresh black pepper
Additional grated cheese - if desired
Cook pasta in lots of salted boiling water until firm to bite ( about 2 minutes for fresh pasta, 9 minutes for dried)
In the meantime:
In a large skillet, heat butter; when the foaming subsides, add the garlic and saute over low heat for about 2 minutes. Add the cream and heat to a boil, allowing to boil gently until slightly thickened, about 2-3 minutes. Remove from heat.
Drain pasta and toss well with the cheese and the cream sauce. Grind a little black pepper to taste, along with a sprinkling of extra cheese to taste, if desired , and add sprigs of fresh parsley for garnish. Serve immediately.
Serve with a fresh Caesar Salad and piping hot garlic bread
