Chocolate Almond Cookies


  • 1 1/4 cup flour
  • 1/2 cup butter - softened
  • 1/2 cup packed brown sugar
  • 1/4 Cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1 - 8 oz. slab of semi-sweet chocolate - break into small chunks
  • 1 3/4 cups of chopped almonds
  • dash of salt
  • 1 tbs. water

    Mix all ingredients except the nuts and chocolate with an electric mixer in a medium size bowl until combined. Stir in the chocolate chunks and the chopped almonds. Drop 2" apart onto ungreased cookie sheet. Flatten each cookie to 2 " diameter with back of a spatula. Bake at 375 degrees for about 8 minutes. Allow to cool on tray for 1 minute, then remove to wire rack for complete cooling.
