Honey is sometimes used as a sugar substitute in various recipes. I don't always care for the way cookies with honey turn out, but this recipe is good enough to make even ole Bill Bailey want to come on back home. I'll bet Patsy just loved baking cookies for her family. I know I sure do. Enjoy!
Sift the baking powder, the flour and the salt together in a bowl. In a large bowl, cream the shortening and the honey. Beat in the eggs and add the vanilla. Add the dry ingredients to the creamed mixture. Gently fold in the chips and the nuts. Drop from tsp. onto a very lightly greased cookie sheet, about 1-1/2 inches apart. Bake in pre-heated 375 degree oven for about 10 minutes. This recipe will make about 5-6 dozen cookies, so you may want to halve all the ingredients.
BAKING TIP: When cookie recipes call for a greased cookie sheet, only grease it one time. Repeated greasing isn't necessary and will only make your cookies yucky.
