"Linger On " Garlicky Mashed Potatoes

Recipe of the Week -"LINGER ON" GARLICKY MASHED POTATOES

" Killer breath that lingers on as I face an empty dawn ", is a common lament of many garlic lovers. But, who cares ? If you like garlic, then the trick is so make sure your honey eats the same thing as you! And better yet, get the whole family to eat these potatoes and you'll be all set! This particular recipe should serve four nicely!

FRESH GARLICKY MASHED POTATOES

There are many different ways of preparing these delicious mashed potatoes, this recipe being among one of the easiest!

6 large Russet potatoes
1/2 tsp. salt
7-8 cloves of garlic
2 tbs. butter or margarine
1/4 cup of milk
pepper to taste (preferably white pepper, but don't over do)

Peel and quarter the potatoes
Rinse the potatoes and then put them in a medium size saucepan along with the garlic cloves and the salt. Add water, just enough to cover the potatoes. Bring to a boil, then reduce heat, cover pot with lid and simmer over medium heat for about 25 minutes. Drain the potatoes and then put them back in the saucepan (remove pan from heat) and mash contents of pan, or remove pan contents, and potato rice them back into the pan. Then with an electric mixer, beat in the butter. Slowly add the milk as you continue to whip. By now it they should be of a nice, creamy consistency. Add pepper as desired and more salt if necessary, to taste. Serve these delcious potatoes while piping hot!

And for those of you who enjoy INSTANT MASHED POTATOES like I do, here's how you can make instant garlicky mashed potatoes!

Follow the instructions on the package for making the instant mashed potatoes (serving 6-7), but add 3-4 crushed cloves of garlic to the water. After water begins to boil, cover the pot and allow the water to simmer with the cloves of garlic in it for about 5 minutes. Remove the garlic cloves, before adding the potato flakes, buds and milk (if your brand calls for milk). Enjoy!

Serving suggestion: Serve as a side dish with chicken, steak, or pork chops!
