Song of the week of 5/28/99 ~ " Just Out Of Reach "
Recipe of the Week ~ "Thyme Cannot Erase " Garlicky~Thyme Croutons
Summer will soon be upon us and that means a lighter fare for many of us. As far as I'm concerned, there's nothing like serving a fresh green salad at a cook-out along with the burgers, steaks and franks. And I promise you, top your salad with these delicious homemade garlic~thyme croutons and " thyme will not erase " the memory or the taste. Your guests will be impressed to learn you made them yourself! Enjoy!
Croutons
You'll Need:
2 cloves garlic ( halved)
2 tbsp butter
1/2 tps dried thyme
2 cups of white bread cut into 1/2-inch Cubes
Rub the cut side of the garlic over the bottom and sides of a small but heavy fry pan. Heat the garlic in the butter over low heat, stirring for about 6 minutes or until garlic is a nice golden color. Remove the garlic from the pan and add the bread cubes and the thyme to the pan. Allow croutons to cook as you continuously toss them around the pan until they are lightly toasted. Sprinkle the croutons with salt if desired. Allow to drain on paper towels.
