This delicious summer fare is from the private collection of Eva Sluiter. Nothing beats it, particularly when using fresh home-grown cucumbers. But, of course, you can enjoy this recipe all year long, too. If you like cucumber salad, I highly recommend this one. You'll love it!
You'll Need
Put the water and sugar* in a small sauce pan and bring to a boil. Remove boiled sugar water from heat and allow it to cool. Once cool, add the vinegar, oil, salt, pepper and parsley to the sugar water mixture. Peel and slice cucumbers and onions and place them in a large bowl. Pour the liquid mixture over the cucumbers and onions. Mix gently. Cover and place in the refrigerator and allow to stand for several hours, or preferably overnight.
