Recipe of the Week ~ "It Was Your Favorite" PASTA


Patsy Cline's favorite pasta dish was spaghetti. My family also likes spaghetti, as well as many other pasta dishes. Not a " week " goes by that I don't serve pasta in one form or another. Spaghetti is a versatile staple that is just " crying " out for variation. This recipe for Spaghetti with Walnuts is fast, simple, and tasty. I think Patsy would have liked this dish too! I prepare this meal using parmesan cheese, but you may also prepare this dish, by making it blue -- with blue cheese, that is!

Spaghetti with Walnuts

You'll Need:
  • about 6 tbsp. virgin olive oil
  • 1 large clove of garlic ~ crushed
  • 1/2 cup of finely chopped walnuts
  • 1/4 cup of freshly grated parmesan Cheese ( or substitute 3 ounces of crumbled blue-veined cheese such as Stilton, Gorgonzola or Roquefort)
  • 3-4 tbsp. of fresh parsley chopped fine
  • 12 ounces of spaghetti

    Boil the spaghetti in salted water until it is al dente (firm to the bite) -- about 8 -10 minutes. Drain well. Heat the oil in a small skillet, stirring in the garlic -- saute` for about a minute. Add the walnuts. Saute` approximately two additional minutes, stirring continuously. In a large pasta bowl, toss the walnut sauce, the spaghetti, the cheese, and the parsley together. Serve immediately.
