Recipe of the Week ~ If You Can Have "FUN" ~ Chicken Chow Fun
It's recipe of the week time once again, which means it is time to have FUN --Chicken Chow Fun! Wok cooking is fast, easy,and yes, fun!! Most Patsifans know Patsy liked Chinese food and that she also liked to have fun. Patsifan Kent (cLoWnbEaR) likes to have fun too. To thank Kent for honoring "SueBee's Kitchen" with his " Fun Site " Award, I dedicate this recipe of the week to him!
Chicken Chow Fun
You'll need:
1 lb boneless chicken ~ cut into bite-size pieces
2 lbs rice noodles
3 tbsp soy sauce (lo-sodium)
1 tbsp Chinese cooking wine or plain cooking wine
1/2 tsp white pepper
2 tbsp corn starch
1 1/2 tsps sugar
6 drops sesame oil ( don't overdo it )
Mix until well coated. Let marinate.
4 scallions ~chopped
2/3 yellow onion ~ slivered
Heat wok to 375. Stir fry chicken. Remove chicken from wok and set aside in a bowl.
Place onions in wok, put in noodles. Once the onions start to cook, add the scallions, add a small amount of water. Put the lid on the wok for a minute. If desired, add soy sauce for coloring and extra flavor. Just prior to serving, add the cooked chicken back into the mix and stir fry for about a minute. Serve immediately and have fun eating it!
