Recipe of the Week ~ "Roll, Roll, Rolled " Ginny~bread " Star Cookies

Among friends and family I am renowned for my holiday cookies. Everyone begs me to make gingerbread cookies, but since I dislike making " roll, roll, rolled " cookies, I rarely include them unless something extra special is happening. This week, something very special IS happening, and I am as excited about it as a child at Christmas. Later this week on August 3, 1999, Virginia "Ginny" Hensley Dick, professionally known as Patsy Cline,is getting a STAR on the Hollywood Walk of Fame. Christmas sure has come early for Patsifans! In our beloved Patsy's honor,I present you with my recipe for " Ginny~bread Star Cookies ". After baking and allowing to cool, decorate with yellow icing or wrap each cooled cookie in thin gold foil, available at food speciality shops.

Ginny~bread Star Cookies

You'll Need:

  • 1 cup Crisco
  • 1 cup sugar
  • 1 egg
  • 1 cup molasses
  • 2 tbs. vinegar
  • 5 cups flour ~ sifted
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. ground ginger
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. all spice or ground cloves

    In a large bowl, cream shortening and sugar. Beat in the egg, molasses, and vinegar. Sift together dry ingredients and blend into creamed mixture. Chill for about 3 hours. Roll dough on lightly floured surface to 1/8 inch thick. Cut in star shapes. Place 1 inch apart on cookie sheet. Bake at 375F for 5 to 6 minutes. Do not overbake. Cool briefly on cookie sheet and then remove to rack. Allow to cool before decorating with icing.
