Happy Easter! This week The Homesick Texan and I decided to coordinate our efforts a bit. We've chosen, as Patsy would have said, " Co~Cola " as our theme. So just in time for Easter, I present you with the traditional ham, basted in the cola Patsy Cline loved best -- Coca~Cola. You may not have served your ham baked in Co~Cola before, but I think you'll like it so much that you'll " always " make it this way from now on. Remember, "things", yes, that includes ham too, go better with Coke!
You'll need:
Put ham, fat side down, in a shallow baking pan, insert a meat thermometer and then pour cola into bottom of the pan until it is about 1/2-inch deep. Bake in a pre~heated oven at 325 degrees for 2 1/2 hours, or until meat thermometer reads 140 degrees, basting with cola at 20 minute intervals. When done, remove ham from pan and allow to cool. Cut away the fat. In a medium bowl, combine the bread crumbs, brown sugar, and the mustards. Add just enough cola to form a nice, thick paste. Put ham on baking rack and pat the paste all over the ham ( just gob it on). Add the remaining cola to the bottom of the pan. Return the ham to the oven and bake 40 minutes at 375 degrees, basting every 10 minutes, until the paste becomes a glaze. Remove pan from oven and allow the ham to sit for about 30 minutes prior to slicing.
