Recipe of Week ~" Make Yourself at Home " Oatmeal Lace Cookies


Patsy liked to open her performances with this song, which is why when I was setting up my website, I decided to use it as a theme. Patsy greets you warmly as she invites you to her dining room table every Friday for the Recipe of the Week. As long as I have this website you will find the words "Come On In and Make Yourself At Home " prominently displayed here. When I think of visiting neighbors and making myself at home, nothing seems more homey to me than freshly baked cookies. And oatmeal is always a yummy choice! But, because it's Christmas, I wanted to present a special oatmeal cookie. And to honor Patsy, who often wore lace dresses, these Chocolate Lace Cookies seemed to fit the bill perfectly. Chocolate Lace cookies are one of my all-time favorites and yet I didn't have the recipe for them posted at SueBee's Kitchen. How is it that this song of all songs, would be chosen randomly by the Patsified! database as Song of the Week, in time to remind me to post one of my favorite holiday cookies for all the world to share ? Lace Cookies

You'll need:

  • 1/4 lb. of sweet butter
  • 1/4 cup of dark corn syrup
  • 1 cup granulated sugar
  • 1 tsp. vanilla extract
  • 3/4 cup of sifted flour
  • 1/4 - 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/4 cup milk
  • 1 cup uncooked Quick Oats or Old fashioned oats
  • 3/4 - 1 cup of chopped blanched almonds
  • semisweet chocolate

    cream the butter with the vanilla until light. Stir in the corn syrup and vanilla. Sift the flour with the salt and baking powder. Add it to the creamed mixture alternately with the milk, beating until well mixed. Add the almonds and the oats and continue to mix until smooth. Line each baking sheet with a sheet of aluminum foil, enough to slightly overlap at ends. Drop the mixture by rounded measuring tsp. onto the cookie sheet lined with foil -- leave about 3 inches between each cookie to allow for spreading. Bake at 325 degrees for about 10 minutes or until the edges are browned and the cookies are bubbling. Cool completely and then peel cookies from foil. Melt the chocolate and spread a thin layer of chocolate over the underside of one cookie and then take another cookie of similar size and put them together like a sandwich cookie. Allow to dry before serving. Store in a tightly covered container, placing waxed paper between the layers . 1
