NEW ORLEANS BANANA FLAPJACKS

As a tradition, Lisa serves these flapjacks on Christmas morning. Now your family can enjoy them anytime.

2 tsp. baking soda
2 cups buttermilk
2 cups flour
2 eggs
3 tbs. melted butter
2 scant tsp. salt
2 cups thinly sliced bananas (4 to 6 medium)
maple syrup, more butter, more banana slices

In large bowl, dissolve baking soda in buttermilk. Add flour, eggs,butter, and salt; stir lightly. Batter should be streaky and lumpy. Gently fold in bananas. Drop by spoonfuls onto hot lightly-oiled griddle. Turn when bubbles begin to break. Cook until golden brown. Serve with topped with maple syrup, butter, and banana slices. Note: batter will thicken as it sits. If necessary to thin it, use up to 1/2 cup additional buttermilk, milk or water.
