Recipe of Week ~ "Lonely Sweet"~ " One " Huge Cookie

Are you looking for that lonely sweet, but you want something that will last awhile? This recipe for ONE huge cookie is a perfect choice. This is the time of year when I find it is too hot to stand around the kitchen baking several batches of cookies. Don't you agree ? So why not bake ONE HUGE cookie so you're able to get out of that kitchen faster! br>

" Lonely Sweet " ~ " One " Huge Cookie You'll Need:
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 oz. of cream cheese
  • 1/2 cup butter or margarine, unsalted
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 cup semisweet chocolate morsels
  • 1/2 cup walnuts or pecans, coarsely chopped

    Preheat oven to 375 degrees F. Lightly grease one 12 inch pizza pan. Stir together flour, baking soda and salt and set aside. In a large bowl, cream together butter, cream cheese and sugars. Add egg and beat until light and fluffy. Add the flour mixture to creamed mixture -- blend until the dough is stiff. Stir in chocolate morsels and nuts. Blend well. Press dough into the prepared pan. Bake 20-25 minutes or until lightly browned around the edges. Center should be firm. Cool in the pan on wire rack. Serve by cutting into wedges.
