Meredy says this soup is delicious. Sure looks good to me!
You'll Need:
1 lb. ground turkey
1 lg. onion, peeled and chopped
1 (46 oz.) can tomato juice (Meredy uses V-8-- it adds a unique flavor)
1 1/4 lb. green cabbage, chopped
3 lg. carrots, peeled and chopped
2-3 ribs celery, chopped
1/2 beef bouillon cube (optional-- Meredy doesn't use it because of the increased sodium)
Ground pepper
Water if needed to thin (you'll need to add water)
Brown turkey with onion. Drain fat. Transfer to saucepan. Add tomato juice, cabbage, carrots, celery, bouillon cube and pepper. Bring soup to boil, reduce heat, cover and simmer soup for 1 1/2 hours minimum.
