Mexican Wedding Cakes

These cookies are known as Mexican Wedding Cakes if they are tinted a pale green and Russian Tea Cakes if left uncolored. Either way, they are delicious and melt in your mouth.

  • 2 sticks of butter - softened at room temperature
  • 1/4 cup sugar
  • 1 tsp. vanilla extract
  • 2 cups of sifted flour
  • 1 cup of finely processed pecans
  • Green food coloring
  • Confectioner's Sugar

    In a medium bowl, cream the butter and add sugar and vanilla; cream until light and fluffy. Add a few drops of food coloring to make a light green tint ( if you're tinting). Add the flour and the pecans; mix well. Roll into 1 inch balls and place 1 " apart on an ungreased cookie sheet. Bake in a 325 degree oven for about 18 minutes, or until lightly browned. Remove from the cookie sheet and while cookies are still warm, roll in the confectioner's sugar. This recipe will yield about 4 dozen cookies.
