you love Sue , but when I get" you to chew, bar cookies will never be the same again! These scrumpciously chewy bar cookies are just "so nice and sweet"! This week's recipe is appropriately dedicated to another Patsifan named Sue , Sue Wilden, who several months ago revealed to me that she adores coconut candy. She may have to beat the eggs slightly, but the " kisses ", she can't beat! Sue, this one is for you!

Instructions:
1. Heat oven to 350°F. Lightly grease 9-inch square baking pan.
2. In large bowl, stir together coconut, sugar, flour and salt. Add egg whites, egg and almond extract; stir until well blended. Stir in MINI KISSES Chocolate. Spread mixture into prepared pan, covering all chocolate pieces with coconut mixture.
3. Bake 35 minutes or until lightly browned. Remove from oven to wire rack. Cool completely in pan on wire rack. Cover with foil; allow to stand at room temperature about 8 hours or overnight. Cut into bars. About 24 bars.
VARIATION: Omit MINI KISSES Chocolate in batter. Immediately after removing pan from oven, place desired number of chocolate pieces on top, pressing down lightly. Cool completely. Cut into bars.
