Recipe of Week ~"Give Back Your Ring" ~ Onion Rings


Once again, for SueBee's Kitchen, this is a repeat Song of the Week, one that appeared here just prior to Lisa Flood's Patsified! website being launched. Remember, Recipe of the Week goes hand in hand with the Song of the Week. The last time the song appeared here, I " took back my heart ", offering a low cholesterol, tangy fish dish. This time I thought I'd " give back your ring "! These delicious onion rings will leave your mouth watering for more. But don't go foolin' round when you're making 'em because you'll be using very hot shortening for frying, and might get burned. As a matter of fact, make sure the shortening is hot enough (at least 375 degrees) or your batter won't stick to the onion rings.

Onion Rings

  • 2 large onions ( I prefer Vidalia)
  • one cup of flour
  • one cup of beer (any kind)
  • Two - three tablespoons of sugar( if not using Vidalia)
  • seasoned salt to taste.
  • 3-4 cups of shortening

    Combine beer and flour in large bowl and blend well. Cover the bowl, set aside on counter and allow batter to rest about 3 1/2 hours. Add sugar and salt, mix gently.

    Slice onions into rings about 1/4 inch or larger. Separate the rings. In a deep fry pan, heat shortening to 375 degrees (drop a test ring into the melted shortening -- if hot enough, it will begin to sizzle and quickly rise to the top) Dry onion rings thoroughly with paper towel. Roll in flour before dipping into batter. Fry until delicate golden brown. If you like your rings with a thicker crust, add a little extra flour to the batter. If you want your rings crunchier, add a little extra beer. 1
