Recipe of Week ~ What to Mold ~ Chicken Pate Mold

Sadly, this final studio song brings us to the last formal Song of the Week/Recipe of the Week collaboration between Patsified! and SueBee's Kitchen. Two years ago when I first started presenting THE PATSY RECIPE OF THE WEEK I couldn't imagine that I would be able to present a recipe for each and every song, but I have. It has been an incredible experience for me and I hope you've enjoyed it as much as I have. So, will this be the end of Patsy Recipes ? Not quite. Although I will not be presenting these recipes on a weekly basis, I will from time to time continue to present recipes based on remaining Patsy Cline recordings, including her live performances and radio transcriptions.

CHICKEN PATE

  • 1 1/2 cups of Chicken Breast ~ cooked so it's "golden" color ~ minced
  • 8 oz Cream Cheese ~ softened
  • 2 Tbs Mayonnaise
  • 2 tsp Lemon juice
  • 4 Tbs Onion ~ chopped
  • 2 Tbs Sherry - dry, not cream
  • 1/4 tsp Frank's Hot sauce or equivalent
  • 1/8 t Ground Nutmeg
  • Hungarian Paprika
  • Fresh parsley sprigs

    Combine chicken (which has been finely chopped), Cream Cheese, onion, sherry, mayonnaise, lemon juice, hot sauce, and nutmeg in container of electric blender or a food processor; process until smooth. Transfer mixture to a 2 cup mold coated with cooking spray (Pam). Cover, and chill overnight. Unmold onto a serving plate. Sprinkle with paprika. Garnish with fresh parsley sprigs. Serve with melba toast or other assorted crackers. 1
