SONG OF THE WEEK ~ 7/24/98 " I'VE LOVED AND LOST AGAIN"

THE RECIPE OF THE WEEK IS:

"I'VE LOST AGAIN" Baked Pears with Whipped Topping

"I've gained and lost again...oh what a body conscious era we're living in..." Over the years I think I've lost and gained the same ten pounds about one hundred times! No wonder why the term "Yo-Yo Dieter" was coined to describe people such as myself! In her day, Patsy Cline was a "Diet Queen", which is readily evident when viewing the array of photos taken of Patsy over the years.

When dieting, sometimes a different, good-tasting dessert can help quell those sweet cravings so dieters can say "I've lost again ". So, for this Recipe of the Week I am offering up an elegant low calorie, low fat dessert that makes good use of the pears that are soon to be plentiful. Garnished and presented properly, your guests won't even miss the cheesecake!

"I've Lossed Again " Baked Pears with Lo-Cal or Fat-Free Whipped Topping

You'll need:

  • 4 small pears
  • 1/4 tsp. ground cinnamon
  • 1 tbs. lemon juice
  • 1/2 cup of water
  • 2 tbs. of tightly-packed brown sugar
  • Lo-Cal or Fat-Free Whipped Topping such as Cool Whip

Peel pears and cut in half lengthwise. Clean out the core, then place the pears (flat side down) in a small baking dish. Mix the brown sugar, cinnamon, water and lemon juice together in a small bowl and then pour the mixture over the pears. Cover the baking dish and bake in a 350 degree oven for approximately 45 minutes or until the pears are tender. While the pears are baking, baste periodically with the pan juices. Serve by placing 2 pear halves in small serving bowl. Spoon pan juices over the the pears and then top each pear with a dollop of the whipped topping.

SueBee serving suggestion: A sprig of fresh mint and a cinnamon stick with just a sprinkling of cinnamon sugar atop the whipped topping will make this dessert extra special!
