Hey gang, it's two weeks early, but let's plan ahead, shall we?
Back in Patsy's day, The SuperBowl did not exist, but there were still plenty of football games occupying the time of many a 50's & early 60's fan. My other " half " adores football. When someone enjoys football even " half as much" as some of my family members do, SuperBowl Sunday is treated like a holiday. And although I don't like football at all, each SuperBowl Sunday I find myself playing host to a family of football fans. This pepperoni~cheese recipe is fast, easy to prepare, and is served appropriately enough on " half " a hero. It can easily be prepared and eaten during half-time and makes a nice alternative to pizza.
You'll Need:
In a medium bowl, combine Mozzarella cheese, pepperoni, onion, parsley, and olive oil. Spread the mixture on cut side of hero. Brush tops of hero with additional oil and sprinkle with Parmesan cheese. Bake at 375 degrees in a pre-heated oven for about 10 minutes or until golden and thoroughly heated. My son adores this one even without the pepperoni !
