Song of the Week of 1/22/99 ~ " The Wayward Wind "

Recipe of the Week ~ "Next of Kin " - Porkchops Pizziola


The way tornadoes have caused devastation and death in several states this past week, it's ironic and sad that the song of the week would turn out to be " The Wayward Wind ". My heart and prayers go out to the families of the tornado victims -- those who have lost loved ones and to those who have lost their homes. Tragedies like this certainly reinforce the importance of family to me. To honor my "next of kin " I present you with one of my very favorite dishes created by my next of kin, my mother Jo. Patsy really liked Italian food, and what country gal doesn't like pork ? This recipe combines the two. It's quick, it's simple, it's delicious. Thanks Mom!

You'll need:

  • 6 center cut pork chops ~ approx. 1 - 1/1/2" thick
  • 6 nice slices of Swiss Cheese
  • your favorite Italian spiced tomato sauce
  • 1 box of frozen peas
  • Parmesan cheese ~ grated

    In a frying pan, brown the chops in oil or use a non-stick pan sprayed with Pam. In a baking dish or pan, spread enough tomato sauce to cover the bottom of pan. Place the lightly browned pork chops on top of the sauce, break up the package of frozen peas and sprinkle them on top of the pork chops. Take the Swiss cheese and place one slice over each of the chops. Add more sauce on top of the cheese and then sprinkle with Parmesan cheese to taste. Cover with aluminum foil and bake at 350 for about an hour. And here are some words of caution from a loving mother " After removing baking pan from the oven, *carefully* pull the foil away to avoid burns! "
