Hot German Potato Salad


  • 2 lbs. potatoes, pared and sliced
  • 1/4 cup cider vingear
  • 1/2 tsp. salt
  • 1/3 cup bacon drippings
  • 1 tsp. onion (minced)
  • 6-8 slices of very crisp bacon ( crumbled)

    Cook the bacon and save the drippings.

    In a medium pot, cook the potatoes in 1 inch of boiling salted water, covered. Cook until tender. Drain,pare and slice the potatoes -- set aside

    While the potatoes are cooking, make the dressing by heating up the bacon drippings, vinegar, onion, and salt. You may add a few dashes of paprika to this mixture if you like.

    In a large bowl, combine the hot potato slices, the dressing and the bacon -- toss gently as to not break the potato slices.

    Serve immediately. This amount will make about 6 servings.
