PERFECT ROAST BEEF
*** An alternate method for cooking roast beef has been added
The following method of cooking roast beef works very well with a roast between
4-12 lbs. ONLY USE THIS METHOD WITH A WELL INSULATED OVEN
Allow the roast to stand at room temperature for 2 - 4 hours
In a shallow pan, with fat side up, rub a small amount of flour, salt and
pepper into the fat
Place the roast in a pre-heated 500 degree oven
Allow 5 minutes per pound. When the time is up, shut off the oven.
DO NOT OPEN THE OVEN DOOR NO MATTER WHAT, FOR AT LEAST 2 HOURS

***This method is for a 3-1/2 to 4 lb. roast ONLY
Pre-heat the oven to 375 degrees
Salt the roast beef - place roast on top of a rack in shallow baking pan and bake for approximately 45 minutes
TURN THE OVEN OFF AND LEAVE ROAST IN OVEN WITH DOOR SHUT FOR ANOTHER 15 MINUTES
Remove the roast and let stand 15 minutes prior to slicing
