For each serving, break 2 eggs into a bowl and add about 2 tbs. of milk. Mix until blended. Heat about 1/2 tbs. of butter or margarine in a skillet over medium heat until hot enough to have a drop of water sizzle. Pour egg mixture into skillet. As mix begins to set at the bottom and sides, gently lift the cooked portion of eggs up with spatula so that the uncooked portion can spill over to bottom of skillet. Cook until eggs are thickened but moist... about 4 minutes. Don't over stir!
