Among the many foods Patsy Cline enjoyed was "Shrimp Salad ". Although these " boats" can't be used for "drifting out across the ocean blue", this shrimp salad should satisfy your seafood craving.
1 lb. of cooked, peeled shrimp, cut into 1/2 " pieces
1 1/4 tsp. lemon juice
1 large stalk of celery,chopped fine
1/8 cup of minced onion
mayonaise to taste
1 - 2 dashes of Worcestershire Sauce
Dash of garlic powder
salt and pepper to taste
4 large whole leaves of iceberg lettuce
In a medium bowl, place chopped shrimp and lemon juice, toss to coat. Add the celery, onion, salt, pepper, garlic powder and mayonaise. Add the Worcestershire sauce on top of the dollop of mayonaise. Blend all ingredients well. Chill for several hours to allow time for flavors to meld. Scoop the shrimp salad into the boats of lettuce. Serve with fresh fruit, crackers or toast.
