"Sweet Cream Puffs (for you)"

I always used to think that making my own creampuffs would be just too complicated, but they're surprisingly simple. I can just imagine Patsy Cline whipping up a batch of these delectable goodies for her family on a cool Saturday afternoon, perhaps even bringing a batch with her to a friend's home that evening. These delightful puffs can be filled with your choice of "sweet and dreamy " fillings.

Cream Puffs
You'll need:

  • 1 stick butter
  • 1 teaspoon salt
  • 1 cup water
  • 1 cup flour
  • 4 eggs
    In a saucepan melt together butter, salt and water until it comes to a good boil. Add the flour and mix constantly until it can be formed in to a ball. Remove from heat. Then add all four eggs at one time until well mixed.** Note: many cooks like to add each egg separately, but I find adding all at once works just fine. Beat until smooth. Drop the dough in about 1/4 of a cup size dollops onto an ungreased baking sheet allowing at least 2-3 inches between each puff. Bake in a pre-heated oven at 400 degrees for about 37 minutes or until golden and pouffy looking. Remove from oven and allow to cool but keep the puffs out of drafts. Once cool, cut off the tops and put them aside. Gently pull out any excess dough inside the puff, then carefully fill with your choice of "sweet creams" -- vanilla pudding, custard, chocolate pudding, whipped cream, ice cream, a fruit-cream mix ~ use your imagination as this recipe begs for a variety of different fillings.

    For something extra special, why not drizzle some chocolate sauce or syrup over them just prior to serving.
