This is the recipe I used when I baked my first batch of cookies. I feel it's the perfect recipe to present here today because just as Patsy and her beautiful music have given me immense enjoyment, the baking of these cookies marked my enjoyment of baking and cooking. These three elements are the key to " SueBee's Kitchen " -- Patsy, baking and cooking. Appropriately, these cookies are called " Thumbprints ", so what could be more fitting than to use this recipe for a song entitled " Fingerprints "! Besides, just like a fingerprint Patsy is one-of-a-kind. Neither Patsy, her music nor her voice can ever be duplicated!
Thumbprint Cookies
Cream together butter and the granulated sugar until fluffy. Add egg yolks, vanilla, and salt; beat well. Gradually add the flour and then mix well. Shape into 3/4 inch balls. Dip balls in slightly beaten egg whites, then roll in the finely chopped walnuts. Place cookies 1 inch apart on lightly greased cookie sheet. Press down center of each ball with thumb. Fill centers of cookies with the preserves or jam. Bake for 15 to 17 minutes at 350 degrees in a preheated oven. Allow to cool slightly before removing from pan. Cool on rack. Makes about 3 dozen.
