This recipe of the week was created by Jimmy Walker of KY in honor of Patsy Cline. I selected Jimmy's recipe as the first recipe to appear on my Patsy Recipe Page because he had taken the time to create this special pie in her honor.
1 frozen deep dish pie shell ( Pet Ritz for the Opry and Patsy)
1 small box of Instant Jello White-Chocolate Pudding
1 Quart of FRESH** Strawberries - sliced
Chunk of dark chocolate*
Prepare the pie shell according to directions. Set shell aside. Mix the box of pudding with skim milk according to directions and refrigerate. Once pudding has set, fold the strawberries into the pudding mixture and then spoon mixture into the pie shell.
Melt the chocolate in microwave or double-boiler and drizzle the melted chocolate over the top of the pie. Refrigerate.
Optional: Add whipped topping as desired.
SueBee Note: I've recently made this pie and it really is delicious. You may want to put the pie in the freezer about 45 minutes prior to serving. Cut pie with a very sharp knife to assist in cutting through the berries. Even if the pie "falls to pieces" when you're serving it, it still looks nice and tastes great!
** Use fresh strawberries because you will not be able to drain frozen strawberries sufficiently
*Although Jimmy prefers using fancy dark chocolate, milk or white chocolate may be substituted.
