The Recipe of the Week: " Fry Again " Chicken
With most people today being so health conscious, it's rare to see a recipe promoting " frying ", however, Patsy loved fried chicken, so in her honor, here is a recipe for Southern Fried Chicken given to me 25 years ago by a Southern gal named Delores.
3-1/2 - 4 lb. frying chicken cut in pieces
salt
pepper
flour
Peanut oil (you can substitute vegetable oil or Crisco)
cast iron or heavy fry pan
Season the chicken with salt & pepper and then dredge the chicken pieces in the flour. While the fat is heating, set chicken aside.
Put enough oil or Crisco into a large heavy fry pan so that it is about 1 1/2 inches deep. Heat the oil to about 350 degrees and then add chicken, beginning with the largest pieces first. Fry for about 20 minutes or until chicken is cooked through. Drain on paper towels.
And for those of you who've vowed never to "fry again", here's a
recipe for " oven fried chicken "
6 skinned chicken breasts
4 tbs. of melted margarine
2-1/2 tsp. lemon juice
1/8 tsp. pepper
1/4 tsp. salt
1/8 tsp. garlic powder
1/2 cup of plain bread crumbs
Rinse chicken and pat dry. Melt margarine in a small bowl and add lemon juice. In a deep plate or shallow bowl, combine the spices and bread crumbs, mixing well. Dip the chicken into the margarine and then into the bread crumbs until evenly coated. Spray a baking sheet with non-stick cooking spray and place breasts on baking sheet, pouring any remaining margarine mixture over the chicken. Bake in pre-heated 350 degree oven for about 1 hour.
