COLD TURKEY-PASTA SALAD


  • 1 tbs. chopped basil
  • 1/4 tsp. garlic powder
  • 1/8 tsp. dry mustard
  • 2 tbs. unflavored yogurt
  • Approx. 2 tbs. mayonaise
  • 1 tsp. fresh lemon juice
  • 1/4 cup olive oil
  • 2 cups of cooked rotini noodles
  • 1 cup broccoli florets
  • 1 cup of cooked turkey breast- cubed
  • 2 oz. swiss cheese, cut in strips
  • 1 cup halved cherry tomatoes
  • 2 tbs. sliced green onions
  • salt to taste

    Combine basil, garlic, mustard, mayo and lemon juice in a blender or food processor and process for about 30 seconds, gradually adding the olive oil. Add room temperature yogurt and process about 8 seconds. Set aside. Combine the noodles, broccoli, turkey, tomatoes, salt, green onions in a large bowl; add the dressing. Toss gently. Cover and refrigerate until chilled. Serves 4
