SNACKIN' "AFTER MIDNIGHT" BROWNIES


Anyone who enjoyed making food for family and friends as much as Patsy did, surely would have made brownies from scratch. Even with a busy schedule, I don't think Patsy would have taken a shortcut and used a commercially prepared mix. Although I don't have Patsy's recipe for brownies, I present to you a long-used recipe for delicious homemade dark as " midnight " brownies. In honor of Patsy and the way she would have made them, there are to be no shortcuts using a microwave oven! These brownies make a wonderful snack both before and "after midnight" and are so very easy to make.

2 squares of unsweetened chocolate
1 stick of sweet butter
1 cup of sugar
1/2 tsp. vanilla extract
2 eggs
1/4 cup flour
1/4 tsp. salt
1 cup of chopped walnuts

Melt the 2 squares of chocolate and the butter in a sauce pan. Remove from heat and stir in the sugar. Add the eggs, the vanilla extract and beat. Then mix in the flour, the salt and the walnuts. Scoop batter into a buttered 8" x 8" square pan. Bake in a pre-heated 325 degree oven for about 40 minutes. Allow brownies to cool, cut to desired size, and dig in!
