What could be more appropriate than a fish recipe to go along with this religious song ? Back in the 50's & 60's when Patsy would have been baking a fish dinner for Charlie, it may have been done so with reluctance because of the lasting effects of a fishy kitchen. (Phew! Thou Art Strong!) Back then, there were few choices in room sprays, and more often than not,they didn't mix well with fish odor. In today's times with so many choices of sprays, neutralizers, etc., there's no excuse not to make fish for dinner anymore. I don't know if weakfish is available from your "shore", but it is from mine.
You'll Need:
Clean and bone the fish, or have your market do it for.
Sprinkle with salt and pepper. Roll fish in flour and then place each in a baking dish sprayed lightly with Pam or use parchment paper. Stuff each fish with the spinach ~ rice mixture (add salt to mixture as preferred)and top with brown butter sauce(see below).Bake at 400 degrees until fish is opaque.
Brown Butter Sauce
Melt 3 tablespoons of butter and allow to reach the point of browness. Just before you top the fish with it, mix in a drop or two of fresh lemon juice and some finely minced parsley.
