As you may already know, Patsy Cline really liked Chinese food and she loved spaghetti. In her honor, I present the two dishes as one, in the form of Lo Mein, a traditional Chinese dish
that is made just right with "so long", spaghetti-like noodles. This recipe begs for many substitutes and by adding other vegetables or a different meat, you can't be "so wrong" that you won't be able to make it right!
You will need :
1/2 lb. of chicken breast (you may substitute steak, pork, or shrimp as desired)
Prepare packaged spaghetti as directed on package, al dente (firm), drain and then rinse in cold water. Add a few drops of oil at this point to prevent the noodles from sticking together. Set aside.
Slice your meat in very thin strips ( if using beef, cut across the grain in pieces about 2 inches long)
Heat your wok or large, deep fry pan to where is just starting to "smoke" and then add half of the oil. Stir in the meat mixture and stir fry for about two minutes, making sure you
don't overcook it. Remove to a dish or bowl.
Then, add the rest of the peanut oil to fry pan and stir fry the vegetables for about 2 minutes, adding the spaghetti and stirring well, while you add the meat mixture and the soy sauce. Stir entire dish for about 1- 1/2 additional minutes to heat.
ENJOY!
