Recipe of the Month
GRAM'S OLD FASHIONED TEA CAKES
This is a recipe from my childhood. The only grandparent I ever knew was "Gram," a petite but strong-willed lady who lived with us. She would make these tea cakes for the children and they were always a treat.
1 3/4 cups sugar
1 cup shortening (or butter or margarine)
2 eggs
3 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla flavoring
Cream together sugar and shortening. Add eggs, one at a time. Beat well. Gradually add flour, soda and salt, then add vanilla flavoring. Knead dough, roll out on floured surface, and cut with biscuit cutter or glass tumbler. Bake in a 325 degree oven for 8 to 10 minutes until done. Spread out on plate to cool.
