Ingredients
2 cucumbers, peeled, deseeded and very finely diced
1 small onion, finely chopped
2 tsp vinegar
1 tsp olive oil
1 tbsp mint, finely chopped
1 c yoghurt, drained
salt and pepper to taste
Method
Beat the yoghurt with the vinegar, oil, salt and pepper. Stir in the cucumbers, onion and mint. Taste and adjust seasoning.
Serve as a dip with wafers or soup sticks or as a side salad with grilled meat.
